The story of El Diviso, Rosas, Cauca highlights the dedication of farmer Tito Rojas, a member of Federación
Campesina del Cauca, who cultivates specialty Castillo coffee using agroecological and organic farming methods.
His one-hectare farm is naturally shaded by native trees, supporting biodiversity and maintaining healthy soil
without the use of agrochemicals.
The coffee undergoes a precise post-harvest process, including 8-hour pre-fermentation, 30-hour anaerobic
fermentation, washing, 12 days of parabolic drying, and a 15-day stabilization period in fique bags. These
controlled steps help develop refined floral, citrus, honey, and caramel-like flavor notes.
This exceptional lot was nominated for the Subasta por la Paz, an auction supporting high-quality coffees from
conflict-affected regions. Tito Rojas’ journey reflects a lifelong commitment to sustainable farming, family tradition,
and community development, demonstrating how meticulous cultivation and processing can produce world-class
specialty coffee while supporting rural livelihoods.
