Jeferson Bolaños’ Washed Gesha coffee is produced through meticulous selective harvesting of only fully ripe
cherries, followed by floating, 12-hour pre-fermentation, 36-hour anaerobic fermentation, and double washing to
ensure cup clarity and refined sweetness.
The coffee is dried on raised beds for 2 days with regular turning to maintain even moisture, then stabilized for 30
days in fique bags, a traditional Colombian storage method that enhances flavor harmony. The result is an elegant
cup profile featuring floral aroma, chocolate and caramel sweetness, and bright citrus-like acidity.
This exceptional Gesha lot was the winner of the Subasta por la Paz in November 2024, achieving a historic
auction price of $126 USD per pound, marking a milestone in Colombian specialty coffee.
Jeferson’s journey reflects resilience and transformation, demonstrating how specialty coffee farming can provide
sustainable economic opportunities and support community development in conflict-affected regions.
