Café Rivense del Chirripó is a family micromill founded by Régulo Ureña and Isabel Rojas in 2005, located in southern part of Costa Rica, in Brunca region settled in a micro-region called Chirripó.
The coffee is picked when the cherries are ripest, pulped in a process to keep mucilage full and clean, dried 100% naturally in African raised beds under a shade to promote even drying and good amount of airflow throughout the bed, milled and classified with high quality standards.
This lot is a Catuai variety in a honey process with special fermentation thus the name HSF.
Special Fermentation refers to the approach being applied on this coffee where it is de-pulped and fermented for more than 72 hours, dried slowly in an African raised beds under parabolic shades - expressing unique characteristic in a cup which is vibrant and sparkling.
