The Hoysala plantations have been in existence since the late 1800’s. Producing high quality, 100% Chemical Free, coffee, spices and fruit, in the Western Ghats Region of Karnataka State. Running currently with the fourth generations managing these plantations. Hoysala Coffee remains committed to producing & delivering excellent products, consistently.
Catimor is a variety of coffee that is a cross-bred. Rooting from a Timor hybrid- which is a breed of Canephora (robusta) and a Caturra which is a mutation of a Bourbon variety. The result of this hybridized coffee is high yielding and higher resistant to pests and diseases like coffee leaf rust. Ripe harvested fruit is first hand garbled to remove partially green cherries. The fruit is then washed clean with fresh spring water and passed through two siphons, to remove low density fruit. The cherries are first air dried on special trays – cold ambient air is blown through the beans to remove surface moisture. The cherries are then spread on mat covered BBQ tiles to allow the sugars to caramelize. They are then moved to raised beds or heaped thick to slowly dry. They bagged at 12% Moisture. Dried beans are stored in their cherry casing to rest & stabilize water activity. They are then dry milled, checked for density and graded according to size. Selected beans are first sorted according to color and then garbled by hand, to remove major defects. The beans are now stored in specially lined Jute bags till dispatch.
